This Hot Strawberry Jam Dutch Baby is a light and airy oven-baked pancake with crisp golden edges and a soft, custardy center, topped with warm strawberry jam. It’s an easy yet impressive breakfast that’s perfect for weekend brunches, holidays, or special mornings.

Ingredients

  • 3 large eggs, room temperature
  • 3/4 cup whole milk, room temperature
  • 3/4 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 tablespoons unsalted butter
  • 1/2 cup strawberry jam
  • 1 teaspoon lemon juice (optional)
  • Fresh strawberries, sliced, for garnish
  • Powdered sugar, for dusting (optional)
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and place a 10-inch cast-iron skillet or oven-safe pan inside to heat.
  2. Blend the eggs, milk, flour, sugar, vanilla extract, and salt until the batter is smooth.
  3. Carefully remove the hot skillet from the oven, add the butter, and swirl to coat the pan.
  4. Immediately pour the batter into the hot skillet and return it to the oven.
  5. Bake for 18 to 22 minutes, until puffed, golden brown, and crisp around the edges.
  6. Meanwhile, gently warm the strawberry jam in a small saucepan over low heat. Stir in the lemon juice if using.
  7. Remove the Dutch baby from the oven and spoon the warm strawberry jam over the top.
  8. Garnish with fresh strawberries, powdered sugar, and fresh mint if desired.
  9. Serve immediately while warm and puffed.
