Honey Cashew Cookie Bars combine a soft, buttery cookie base with crunchy cashews coated in a rich honey topping. The topping caramelizes as it bakes, creating sweet, nutty bars with crisp edges and a pleasantly chewy center.

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups roasted cashews, roughly chopped
  • 1/2 cup honey
  • 1/3 cup packed light brown sugar
  • 4 tablespoons unsalted butter, for the topping
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract, for the topping
  • 1/4 teaspoon salt, for the topping

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. For the cookie base, beat the softened butter, granulated sugar, and 1/2 cup brown sugar together until light and creamy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in 2 teaspoons vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the butter mixture and mix just until a soft dough forms.
  6. Transfer the dough to the prepared pan and press it into an even layer using slightly damp fingertips or the bottom of a measuring cup.
  7. Bake the cookie base for about 15 minutes, until it begins to set and is lightly golden around the edges.
  8. While the base bakes, combine the honey, 1/3 cup brown sugar, 4 tablespoons butter, heavy cream, and 1/4 teaspoon salt in a medium saucepan.
  9. Cook over medium-low heat, stirring until the butter melts and the sugar dissolves. Bring to a gentle simmer and cook for about 2 minutes, stirring regularly.
  10. Remove the saucepan from the heat and stir in 1/2 teaspoon vanilla extract and the chopped cashews until the nuts are thoroughly coated.
  11. Carefully spread the warm honey-cashew mixture evenly over the partially baked cookie base.
  12. Return the pan to the oven and bake for another 18–22 minutes, until the cookie base is golden and the cashew topping is bubbling and lightly caramelized.
  13. Remove from the oven and let the bars cool completely in the pan so the honey topping can set.
  14. Once completely cooled, lift the slab from the pan using the parchment paper and cut into squares or rectangles.

Notes

  • For salted honey cashew bars, sprinkle a small amount of flaky sea salt over the topping immediately after baking.
  • Drizzle the completely cooled bars with melted dark or semisweet chocolate, or dip one side of each bar in chocolate.
  • Lightly toast the cashews for deeper nutty flavor. If using salted cashews, reduce or omit the additional salt in the topping.
  • Replace some of the cashews with almonds, pecans, or peanuts for a mixed-nut variation.
  • Add a little cinnamon or a small pinch of cardamom to the cookie dough for a warm spiced variation.
  • Finely grated orange zest can be added to the cookie base for a bright citrus contrast.
  • Cool the bars completely before cutting. For especially clean slices, chill them briefly and use a sharp knife.
  • Store in an airtight container at room temperature for 3–4 days or refrigerate for up to 1 week.
  • Freeze the bars in a freezer-safe container with parchment between the layers for up to 2–3 months.
  • If desired, warm an individual bar in the microwave for only 5–10 seconds to avoid making the honey topping excessively soft and sticky.
