Homemade Tagalong Cookies combine crisp buttery shortbread, a creamy peanut butter layer, and a smooth semisweet chocolate coating. These rich chocolate peanut butter cookies are perfect for dessert trays, parties, or homemade treats.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 2 tablespoons unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 12 ounces semisweet chocolate or chocolate melting wafers
  • 1 tablespoon coconut oil or vegetable shortening, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat 1/2 cup softened butter and the granulated sugar until smooth and creamy. Mix in 1 teaspoon vanilla extract.
  3. Gradually add the flour and 1/4 teaspoon salt, mixing just until a soft dough forms. Avoid overmixing.
  4. Roll the dough on a lightly floured surface to approximately 1/4-inch thickness. Cut the dough into small rounds with a cookie cutter.
  5. Arrange the rounds on the prepared baking sheet and bake for 10–12 minutes, or until the edges are lightly golden.
  6. Cool the cookies on the baking sheet for several minutes, then transfer them to a wire rack and cool completely.
  7. Combine the peanut butter, powdered sugar, 2 tablespoons softened butter, 1/2 teaspoon vanilla extract, and a pinch of salt. Mix until smooth and thick enough to hold its shape.
  8. Place a small spoonful of peanut butter filling on each cooled cookie. Gently shape and flatten it to cover most of the top, leaving a small border around the edge.
  9. Refrigerate the assembled cookies for 20–30 minutes, until the peanut butter filling is firm.
  10. Melt the chocolate in short microwave intervals, stirring frequently until smooth. If necessary, stir in coconut oil or vegetable shortening to thin the chocolate to a dipping consistency.
  11. Dip each chilled cookie into the melted chocolate, coating the top, sides, and bottom. Lift it out with a fork and allow excess chocolate to drip back into the bowl.
  12. Transfer the coated cookies to parchment paper and let the chocolate set completely. Refrigerate briefly if desired to speed up setting.

Notes

  • Conventional creamy peanut butter works especially well because its stable consistency makes the filling easy to shape.
  • If using natural peanut butter, stir it thoroughly and make sure it is not excessively runny or oily.
  • Dark, semisweet, or milk chocolate can be used depending on the desired sweetness.
  • For extra texture, add finely chopped roasted peanuts to the filling or sprinkle them over the chocolate before it sets.
  • For a salty-sweet finish, sprinkle freshly coated cookies with a small amount of flaky sea salt.
  • Store the cookies airtight at cool room temperature for several days or refrigerate for up to 1–2 weeks.
  • Freeze finished cookies with parchment between the layers for up to 2–3 months.
