Homemade Jello is a colorful and refreshing dessert made with fruit juice, unflavored gelatin, and optional sweetener. Choose your favorite juice and serve it in individual cups or molds for an easy make-ahead treat.

Ingredients

  • 4 cups fruit juice, divided
  • 3 tablespoons unflavored powdered gelatin
  • 24 tablespoons granulated sugar, honey, or preferred sweetener, optional
  • Cold water, if needed
  • 1 cup suitable fresh fruit, optional

Instructions

  1. Pour 1 cup of the cold fruit juice into a bowl and sprinkle the unflavored gelatin evenly over the surface.
  2. Let the gelatin sit undisturbed for about 5 minutes to bloom and soften.
  3. Pour the remaining 3 cups of fruit juice into a small saucepan and warm over medium-low heat until hot but not vigorously boiling.
  4. Add the preferred sweetener to the warm juice and stir until completely dissolved.
  5. Add the bloomed gelatin mixture to the warm juice and whisk until the gelatin is completely dissolved and no visible granules remain.
  6. Remove from the heat and allow the mixture to cool slightly.
  7. Pour the gelatin mixture into a serving dish, individual glasses, or small molds.
  8. If using suitable fresh fruit, distribute the pieces among the containers.
  9. Refrigerate for at least 4 hours or overnight, until completely firm.
  10. Serve the homemade Jello chilled directly from the serving dishes or carefully unmold before serving.

Notes

  • The sweetness needed will depend on the fruit juice, so taste the juice before adding sweetener.
  • Apple, grape, cranberry, orange, raspberry, strawberry, and other berry-based juices are good options.
  • Avoid adding fresh pineapple, kiwi, papaya, or figs because their natural enzymes can prevent gelatin from setting properly. Cooked or canned versions are generally more suitable.
  • For layered Jello, prepare different flavors separately and allow each layer to set before carefully adding the next.
  • For a creamy variation, combine the cooled gelatin mixture with an appropriate creamy ingredient such as yogurt before chilling.
  • Keep homemade Jello covered in the refrigerator and enjoy within 5–7 days for the best texture.
  • Freezing is not recommended because it can damage the gelatin structure and produce a watery texture after thawing.
