Homemade Goat Cheese is a fresh, creamy cheese made with goat’s milk, lemon juice or vinegar, and a touch of salt. This simple recipe creates a tangy, spreadable cheese that’s perfect for crackers, salads, sandwiches, and countless savory dishes.

Ingredients

  • 1 quart fresh goat’s milk
  • 3 tablespoons fresh lemon juice or white vinegar
  • 1/2 teaspoon salt
  • Fresh herbs such as thyme, rosemary, chives, or parsley (optional)
  • Freshly ground black pepper (optional)

Instructions

  1. Pour the goat’s milk into a heavy-bottomed saucepan and heat over medium heat until it reaches 185°F (85°C), stirring occasionally.
  2. Remove the saucepan from the heat and slowly stir in the lemon juice or white vinegar.
  3. Let the mixture rest for about 10 minutes until the curds separate from the whey.
  4. Line a fine-mesh strainer with cheesecloth and carefully pour the mixture through it.
  5. Allow the curds to drain for 30 to 60 minutes, depending on the desired consistency.
  6. Transfer the drained cheese to a bowl and stir in the salt.
  7. Mix in fresh herbs or black pepper if desired.
  8. Serve immediately or refrigerate until chilled.

Notes

  • Mix in fresh dill, chives, or rosemary for an herby variation.
  • Add cracked black pepper and garlic powder for a savory spread.
  • Stir in honey and chopped walnuts for a sweet appetizer.
  • Roll the finished cheese in chopped pistachios or fresh herbs for an elegant presentation.
  • Add lemon zest for a brighter citrus flavor.
  • Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months, although the texture may become slightly more crumbly after thawing.
