Homemade Fudgesicles

Rich and creamy homemade fudgesicles made with cocoa powder, real chocolate, milk, cream, and vanilla. These smooth chocolate frozen pops are an easy make-ahead treat for warm summer days.

Ingredients

  • Whole milk
  • Heavy cream
  • Granulated sugar
  • Unsweetened cocoa powder
  • Semisweet or dark chocolate, finely chopped
  • Cornstarch
  • Vanilla extract
  • Fine sea salt

Instructions

  1. Add the sugar, cocoa powder, cornstarch, and salt to a medium saucepan and whisk thoroughly to break up any lumps.
  2. Gradually pour in the milk while whisking continuously until smooth. Add the heavy cream and whisk until evenly combined.
  3. Place the saucepan over medium heat and cook, whisking frequently. Once the mixture begins to gently simmer and thicken, reduce the heat and cook briefly until smooth and pudding-like.
  4. Remove the saucepan from the heat and add the finely chopped chocolate. Let it sit briefly, then whisk until the chocolate is completely melted and the mixture is glossy and smooth.
  5. Stir in the vanilla extract. Once cool enough to taste safely, adjust the sweetness or chocolate intensity if desired.
  6. Allow the chocolate mixture to cool to room temperature, stirring occasionally to discourage a skin from forming. Alternatively, transfer it to a bowl and refrigerate briefly to speed cooling.
  7. Pour the cooled mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks according to the mold instructions.
  8. Place the molds on a level surface in the freezer and freeze for at least 6 hours or preferably overnight, until completely firm.
  9. To serve, briefly run the outside of each mold under lukewarm water and gently pull the stick until the fudgesicle releases.

Notes

  • Using both cocoa powder and real chocolate creates a deeper chocolate flavor and contributes to a smoother frozen texture.
  • For peanut butter fudgesicles, whisk creamy peanut butter into the warm chocolate mixture before cooling.
  • For mocha fudgesicles, add espresso powder or a small amount of strong coffee to the chocolate mixture.
  • For mint chocolate fudgesicles, add a very small amount of peppermint extract with the vanilla.
  • For chocolate banana fudgesicles, blend a ripe banana into the cooled chocolate mixture before filling the molds.
  • If popsicle molds are unavailable, use small freezer-safe paper cups and insert wooden sticks once the mixture is partially frozen and thick enough to support them.
  • Store frozen fudgesicles individually wrapped in parchment or wax paper inside a freezer-safe airtight container or bag for up to 1–2 months for best quality.
  • If a fudgesicle does not release easily, warm the outside of the mold under lukewarm water for a few additional seconds rather than forcing the stick.
