These homemade animal crackers are lightly sweet, buttery, and crisp with a hint of warm cinnamon. They’re fun to make with animal-shaped cookie cutters and perfect for snacks, lunchboxes, or holiday treats.

Ingredients

  • 9 tablespoons unsalted butter, softened
  • 1/4 cup granulated sugar
  • 2 tablespoons honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • Pinch of salt (optional)

Instructions

  1. Cream the softened butter, granulated sugar, and honey together until light and fluffy.
  2. Beat in the egg and vanilla extract until fully combined.
  3. In a separate bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, ground cinnamon, and optional salt.
  4. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  5. Wrap the dough tightly and chill in the refrigerator for 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll the chilled dough to about 1/4-inch thick on a lightly floured surface.
  8. Cut into animal shapes using cookie cutters and place on the prepared baking sheets.
  9. Bake for 10–12 minutes, or until the edges are lightly golden.
  10. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • Add a pinch of nutmeg or ginger for extra warmth.
  • Substitute maple syrup for the honey if desired.
  • Use all all-purpose flour for a softer texture.
  • Decorate cooled crackers with a simple vanilla glaze or sprinkle with cinnamon sugar before baking.
  • Store in an airtight container at room temperature for up to 1 week or freeze for up to 3 months.
  • Warm in a 300°F oven for 3–5 minutes to restore crispness.
