Hobo Casserole is a hearty, comforting one-dish meal combining ground beef, mixed vegetables, and creamy mashed potatoes baked to golden perfection. It’s a family-friendly classic that’s easy to prepare and satisfying.

Ingredients

  1. 1 pound ground beef
    1 small onion, diced
    2 cups mixed vegetables (carrots, peas, corn, green beans)
    3 cups prepared mashed potatoes (homemade or store-bought)
    1 cup shredded cheddar cheese
    1/2 cup beef broth
    1 tablespoon Worcestershire sauce
    Salt and pepper to taste

Instructions

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  1. In a skillet over medium heat, cook ground beef and diced onion until beef is browned and onions are soft. Drain excess fat.
  2. Stir in mixed vegetables, Worcestershire sauce, salt, and pepper. Cook for 3-4 minutes until vegetables are slightly tender.
  3. Spread the beef and vegetable mixture evenly in the baking dish. Pour beef broth over the mixture.
  4. Spread mashed potatoes over the top and sprinkle with shredded cheddar cheese.
  5. Bake for 25-30 minutes or until cheese is melted, golden, and casserole is heated through.
  6. Let cool slightly before serving.

  3. Use mozzarella, pepper jack, or cheese blends instead of cheddar.
