Ingredients

  • 4 cups cooked cold rice
  • 2 eggs
  • 2 tablespoons butter
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 2 green onions, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked chicken, shrimp, or steak (optional)

Instructions

  1. Use cold cooked rice for the best fried rice texture.
  2. Heat a large skillet or wok over medium-high heat.
  3. Melt the butter in the skillet.
  4. Add the diced onion, carrots, and garlic, then cook until slightly softened.
  5. Push the vegetables to one side of the skillet and scramble the eggs on the other side until fully cooked.
  6. Add the cooked rice and break up any clumps with a spatula.
  7. Stir in the soy sauce and sesame oil.
  8. Add the peas and green onions.
  9. Toss everything together until evenly coated and heated through.
  10. Season with salt and black pepper to taste.
