Ingredients
1 whole chicken (about 4–5 lb)
3 tbsp olive oil or butter
4 cloves garlic
2 tbsp fresh herbs (rosemary, thyme, parsley)
1 lemon, halved
1 onion, halved
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional)
2 cups vegetables such as carrots or potatoes (optional)
Instructions
Preheat the oven to 200°C (400°F).
Pat the chicken dry with paper towels.
Rub the chicken with olive oil or butter.
Season with salt, black pepper, and optional paprika.
Stuff the cavity with lemon, garlic, onion, and herbs.
Tie the legs and tuck the wings under the chicken.
Place in a roasting pan with optional vegetables.
Roast for 60–75 minutes until golden and juices run clear.
Baste occasionally with pan juices.
Let rest for 10–15 minutes before carving.
