A soft and flavorful homemade bread made with mashed potatoes and fresh herbs, creating a tender crumb and an aromatic, savory loaf.

Ingredients

  • 1 cup mashed potatoes
  • 3 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm water or milk
  • 2 tablespoons olive oil or butter
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons fresh herbs such as rosemary, thyme, or parsley, chopped

Instructions

  1. In a small bowl, dissolve yeast and sugar in warm water or milk and let sit until foamy.
  2. In a large bowl, combine mashed potatoes, olive oil or butter, and salt.
  3. Add the yeast mixture and mix well.
  4. Gradually add flour, mixing until a soft dough forms.
  5. Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
  6. Place dough in an oiled bowl, cover, and let rise for about 1 hour until doubled.
  7. Punch down the dough and mix in fresh herbs.
  8. Shape into a loaf and place in a greased pan.
  9. Cover and let rise again for 30–40 minutes.
  10. Preheat oven to 375°F (190°C).
  11. Bake for 30–35 minutes until golden brown.
  12. Cool slightly before slicing and serving.

Notes

  • Add garlic or cheese for extra flavor.
  • Use dried herbs if fresh are unavailable.
  • Shape into rolls instead of a loaf if preferred.
  • Store at room temperature for up to 3 days.
  • Freeze for up to 2 months.
