Ingredients
2 large heirloom tomatoes, sliced
4 slices sourdough or rustic bread
1/4 cup mayonnaise
2 tablespoons pesto
1 clove garlic, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh basil leaves (optional)
4 slices mozzarella or burrata (optional)
Instructions
Slice the heirloom tomatoes and season with salt and black pepper. Let sit for a few minutes.
In a small bowl, mix mayonnaise, pesto, and minced garlic to make the pesto aioli.
Toast the bread slices until golden and crisp.
Spread pesto aioli generously on each slice of bread.
Layer the seasoned tomato slices onto two slices of bread.
Add fresh basil leaves and cheese if using.
Top with remaining bread slices, press gently, and slice in half.
Serve immediately.
