These Healthy Pumpkin Muffins are soft, moist, and packed with warm pumpkin spice flavor. Made with wholesome ingredients, they’re perfect for breakfast, snacks, or a lighter dessert and are easy to make in just one bowl.

Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup rolled oats
  • 1 cup pumpkin puree
  • 2 eggs
  • 1/3 cup maple syrup or honey
  • 1/4 cup unsweetened applesauce
  • 1/4 cup olive oil or melted coconut oil
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/3 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners or lightly grease it.
  2. Whisk together the pumpkin puree, eggs, maple syrup, applesauce, oil, and vanilla until smooth.
  3. Add the whole wheat flour, rolled oats, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  4. Stir gently until the batter is just combined. Do not overmix.
  5. Fold in the chopped nuts or dark chocolate chips, if using.
  6. Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
  7. Bake for about 20 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
  8. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Substitute part of the whole wheat flour with almond flour for a softer texture.
