Ingredients

  • pounds boneless, skinless chicken breasts
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chiles
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 ounces reduced-fat cream cheese, softened
  • Juice of 1 lime
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the white beans, green chiles, onion, garlic, chicken broth, cumin, chili powder, oregano, paprika, salt, and black pepper.
  3. Stir gently to combine the ingredients.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  5. Remove the cooked chicken and shred it using two forks.
  6. Return the shredded chicken to the crockpot.
  7. Stir in the softened cream cheese until fully incorporated and creamy.
  8. Add the lime juice and stir well.
  9. Cook for an additional 15 to 20 minutes until heated through.
  10. Garnish with fresh cilantro before serving.
