Healthy Carrot Cake Waffles combine warm carrot cake spices with wholesome ingredients to create crisp waffles with a soft interior, perfect for a balanced and flavorful breakfast.

Ingredients

  • 1 cup grated carrots
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 large egg
  • 3/4 cup milk (dairy or plant-based)
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 2 tbsp melted coconut oil or butter
  • 1/4 cup chopped walnuts or pecans (optional)
  • 2 tbsp raisins (optional)

Instructions

  1. Preheat the waffle iron according to the manufacturer’s instructions.
  2. In a medium bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk the egg, milk, maple syrup or honey, vanilla extract, and melted coconut oil or butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the grated carrots and optional walnuts or raisins.
  6. Lightly grease the waffle iron if necessary.
  7. Pour the batter into the hot waffle iron and cook for about 3–5 minutes until golden and crisp.
  8. Carefully remove the waffle and repeat with the remaining batter.
  9. Serve warm with toppings such as yogurt, nuts, fruit, or maple syrup.
