Perfect for a quick breakfast, lunch, or dinner, this dish is both delicious and easy to make. The savory hamburger meat blends perfectly with the soft, fluffy eggs, making it a meal the whole family will enjoy. It’s a versatile recipe that can be customized with your favorite veggies and seasonings.

Ingredients

  1. 1 lb ground beef
    6 large eggs
1/2 cup milk or cream (optional, for creamier eggs)
1/4 cup shredded cheese (cheddar, mozzarella, or your favorite cheese)
    1 small onion, chopped (optional)
    1/2 bell pepper, diced (optional)
    Salt and pepper, to taste
1 tbsp butter or oil for cooking

Instructions

Heat a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked (about 5-7 minutes). Drain any excess fat if necessary.

  1. If using, add the chopped onion and bell pepper to the skillet with the beef. Cook for another 2-3 minutes until softened.
  2. While the beef is cooking, crack the eggs into a bowl. Add the milk or cream (if using) and whisk until the eggs are well beaten and smooth.
  3. Push the cooked beef and vegetables to one side of the skillet, and add butter or oil to the empty side. Once melted, pour in the beaten eggs.
  4. Let the eggs cook for a minute or two without stirring, then gently scramble using a spatula. Stir occasionally until the eggs are cooked to your desired consistency.
  5. Once the eggs are nearly done, add the cooked beef and vegetables back in. Stir everything together, and then sprinkle in the shredded cheese. Cook for another 1-2 minutes until the cheese is melted and everything is well combined.
  6. Taste and adjust seasoning with salt and pepper as needed. Serve hot, and enjoy!

Notes

  1. Cheesy Hamburger Scrambled Eggs: Add extra cheese, like cheddar, mozzarella, or even some parmesan, to make it even more indulgent.
  2. Vegetable Scrambled Eggs: Incorporate more veggies like spinach, mushrooms, or tomatoes for added color and nutrition.
  3. Spicy Hamburger Scrambled Eggs: Add a pinch of chili powder, cayenne pepper, or some hot sauce to spice up the dish.
  4. Low-Carb Option: Skip the milk or cream and serve with a side of avocado for a low-carb twist.
  5. Storage: Leftover Hamburger Scrambled Eggs can be stored in an airtight container in the refrigerator for up to 2 days.
  6. Reheating: To reheat, simply warm the dish in a skillet over low heat until heated through, adding a small amount of butter or oil if necessary to prevent sticking. You can also reheat in the microwave, stirring occasionally for even heating.
