These homemade gyros feature juicy, herb-seasoned beef and lamb wrapped in warm pita with fresh vegetables and creamy tzatziki sauce. They are packed with classic Mediterranean flavors and make an easy, satisfying meal.

Ingredients

  • 1 lb ground beef
  • 1 lb ground lamb
  • 1 small red onion, roughly chopped
  • 3 cloves garlic
  • 2 tbsp fresh parsley
  • 2 tsp dried oregano
  • 1 tsp ground coriander
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp dried dill
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 pita breads
  • 2 tomatoes, sliced
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • Pickles (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking tray.
  2. Place the onion, garlic, parsley, oregano, coriander, salt, pepper, ground beef, and ground lamb into a food processor. Process until the mixture is smooth and sticky.
  3. Spread the meat mixture evenly onto the prepared baking tray or shape it into a loaf.
  4. Bake for 20–25 minutes, or until fully cooked and lightly browned.
  5. Let the meat rest for several minutes before slicing it into thin strips.
  6. In a bowl, combine the Greek yogurt, lemon juice, dried dill, garlic powder, salt, and black pepper to make the tzatziki sauce.
  7. Warm the pita bread.
  8. Fill each pita with sliced gyro meat, tomatoes, cucumber, red onion, feta cheese, and a generous spoonful of tzatziki.
  9. Fold the pita and serve immediately.

Notes

  • Use all ground beef for a milder flavor.
  • Ground chicken or turkey can be substituted for a lighter option.
  • Add lettuce, olives, or pepperoncini for extra freshness.
  • Serve the gyro filling over rice or salad instead of pita if desired.
  • Store cooked meat in the refrigerator for up to 4 days or freeze for up to 3 months.
  • Prepare fresh vegetables and tzatziki just before serving for the best texture.
