Ground Beef Fajitas are a quick and flavorful twist on classic fajitas, featuring seasoned ground beef, colorful bell peppers, and onions wrapped in warm tortillas. This easy meal is perfect for busy weeknights and can be customized with your favorite toppings.

Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • Juice of 1 lime
  • 8 small flour or corn tortillas
  • Chopped fresh cilantro, for garnish

  • Guacamole (optional)
  • Shredded cheddar or Mexican cheese blend (optional)
  • Pico de gallo (optional)
  • Sliced avocado (optional)
  • Pickled or fresh jalapeños (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced onion and bell peppers and cook for 5 to 6 minutes until they begin to soften. Transfer them to a plate.
  3. In the same skillet, cook the ground beef until browned, breaking it into crumbles as it cooks. Drain excess grease if needed.
  4. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  5. Add the chili powder, cumin, smoked paprika, onion powder, garlic powder, oregano, salt, and black pepper, stirring to coat the beef evenly.
  6. Return the peppers and onions to the skillet and stir to combine.
  7. Squeeze the lime juice over the mixture and cook for another 2 minutes.
  8. Warm the tortillas in a dry skillet or microwave.
  9. Fill each tortilla with the beef and vegetable mixture.
  10. Garnish with chopped cilantro and any desired toppings before serving.
