Grilled Stuffed Avocado is a healthy and flavorful dish featuring smoky grilled avocado halves filled with a savory mixture of chicken or shrimp, vegetables, cheese, and fresh herbs. Perfect as a light meal, appetizer, or summer side dish.

Ingredients

  • 4 ripe but firm avocados, halved and pitted
  • 1 tablespoon olive oil
  • 1 cup cooked shredded chicken or cooked shrimp
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup corn kernels
  • 1/4 cup crumbled feta cheese or cotija cheese
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the grill to medium heat.
  2. Brush the cut sides of the avocado halves lightly with olive oil.
  3. Place the avocados cut-side down on the grill.
  4. Grill for 2 to 4 minutes until grill marks appear and the avocados are slightly softened.
  5. Remove the avocados from the grill and allow them to cool slightly.
  6. In a mixing bowl, combine the shredded chicken or shrimp, tomatoes, red onion, corn, feta cheese, lime juice, cilantro, salt, and black pepper.
  7. Mix until evenly combined.
  8. Spoon the filling into the center of each grilled avocado half.
  9. Garnish with additional cilantro if desired.
  10. Serve immediately while warm.

Notes

  • For a vegetarian version, replace the chicken or shrimp with black beans, chickpeas, or quinoa.
  • Add jalapenos or hot sauce for extra heat.
  • Use a grill pan indoors if an outdoor grill is unavailable.
  • Prepare the filling up to 1 day in advance and refrigerate until needed.
  • Squeeze extra lime juice over leftovers to help prevent browning.
