Ingredients

  • 8 lamb chops
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 2 cups mixed fresh herbs
  • 3 cups arugula or mixed greens
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 tbsp balsamic vinegar

Instructions

  1. In a bowl, combine 2 tablespoons olive oil, minced garlic, lemon juice, rosemary, thyme, salt, black pepper, and red pepper flakes.
  2. Rub the marinade over the lamb chops and let them rest for at least 30 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Grill the lamb chops for 3 to 4 minutes per side for medium-rare, or longer depending on preferred doneness.
  5. Remove the lamb chops from the grill and allow them to rest for a few minutes.
  6. In a large bowl, combine the mixed herbs, arugula or mixed greens, cucumber, cherry tomatoes, and red onion.
  7. Drizzle the salad with the remaining olive oil and balsamic vinegar, then toss gently.
  8. Serve the grilled lamb chops alongside the fresh herb salad.
