Ingredients

  • 2 pounds chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 tablespoon lemon juice
  • Optional: fresh thyme or parsley

Instructions

  1. Preheat grill to medium-high heat.
  2. Pat chicken thighs dry with paper towels.
  3. In a bowl, mix olive oil, salt, black pepper, garlic powder, paprika, onion powder, and lemon juice.
  4. Rub the seasoning mixture evenly over the chicken thighs.
  5. Place chicken on the grill, skin-side down if using skin-on thighs.
  6. Grill for 6–8 minutes per side, turning occasionally, until charred and cooked through.
  7. Check that internal temperature reaches 75°C (165°F).
  8. Remove from grill and let rest for a few minutes.
  9. Garnish with optional herbs and serve.
