Ingredients
2 pounds chicken thighs
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon onion powder
1 tablespoon lemon juice
Optional: fresh thyme or parsley
Instructions
Preheat grill to medium-high heat.
Pat chicken thighs dry with paper towels.
In a bowl, mix olive oil, salt, black pepper, garlic powder, paprika, onion powder, and lemon juice.
Rub the seasoning mixture evenly over the chicken thighs.
Place chicken on the grill, skin-side down if using skin-on thighs.
Grill for 6–8 minutes per side, turning occasionally, until charred and cooked through.
Check that internal temperature reaches 75°C (165°F).
Remove from grill and let rest for a few minutes.
