Ingredients
Boneless chicken breast or thighs, cut into chunks
Olive oil
Garlic, minced
Lemon juice
Lemon zest
Plain yogurt (optional)
Paprika
Ground cumin
Dried oregano or thyme
Salt and pepper
Bell peppers, cut into chunks (optional)
Onion, cut into pieces (optional)
Instructions
In a bowl, whisk together olive oil, garlic, lemon juice, lemon zest, yogurt (if using), paprika, cumin, oregano, salt, and pepper.
Add the chicken pieces and toss to coat well. Cover and marinate for at least 1 hour, preferably up to 8 hours.
Preheat a grill or grill pan over medium-high heat.
Thread the marinated chicken onto skewers, alternating with vegetables if using.
Grill for 10–12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
Remove from the grill and let rest for a few minutes.
Serve warm.
