Grilled Chicken Kabobs with Zesty Garlic Marinade are juicy, tender skewers infused with bright lemon, garlic, and herbs. Perfectly charred and full of flavor, they make an easy and satisfying meal.

Ingredients

  • Boneless chicken breast or thighs, cut into chunks
  • Olive oil
  • Garlic, minced
  • Lemon juice
  • Lemon zest
  • Plain yogurt (optional)
  • Paprika
  • Ground cumin
  • Dried oregano or thyme
  • Salt and pepper
  • Bell peppers, cut into chunks (optional)
  • Onion, cut into pieces (optional)

Instructions

  1. In a bowl, whisk together olive oil, garlic, lemon juice, lemon zest, yogurt (if using), paprika, cumin, oregano, salt, and pepper.
  2. Add the chicken pieces and toss to coat well. Cover and marinate for at least 1 hour, preferably up to 8 hours.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated chicken onto skewers, alternating with vegetables if using.
  5. Grill for 10–12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
  6. Remove from the grill and let rest for a few minutes.
  7. Serve warm.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Add chili flakes or cayenne for a spicy variation.
  • Use fresh herbs like parsley or cilantro for extra flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently to maintain juiciness and avoid overcooking.
