Ingredients

  • 2 cups pineapple chunks
  • 2 peaches, sliced
  • 2 cups watermelon wedges
  • 1 cup strawberries, halved
  • 1 mango, sliced
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 2 tbsp fresh mint leaves
  • 1/2 cup yogurt (optional)
  • 2 tbsp toasted coconut (optional)
  • 1/4 cup granola (optional)
  • 1/4 tsp cinnamon (optional)
  • Fresh basil leaves (optional)

Instructions

  1. Slice the fruit into large even pieces suitable for grilling or griddling.
  2. Heat a griddle pan or grill over medium-high heat.
  3. Lightly brush the fruit with honey or a small amount of oil if desired.
  4. Place the fruit on the hot griddle.
  5. Cook for 1 to 3 minutes per side until grill marks appear and the fruit is lightly caramelized.
  6. Remove the fruit and let cool slightly.
  7. Chop the larger fruit pieces into bite-sized chunks.
  8. Arrange all the fruit in a serving bowl.
  9. Drizzle with lime juice and additional honey if desired.
  10. Garnish with fresh mint leaves and optional toppings before serving.
