Ingredients

  • Chicken breasts
  • Parmesan cheese, grated
  • Panko breadcrumbs
  • Egg
  • Garlic powder
  • Salt
  • Black pepper
  • Olive oil
  • Romaine lettuce or mixed greens
  • Cabbage, finely chopped
  • Cucumber, diced
  • Green onions, sliced
  • Avocado (optional)
  • Mayonnaise
  • Greek yogurt or sour cream
  • Fresh parsley
  • Fresh basil
  • Chives
  • Lemon juice
  • Garlic
  • Olive oil
  • Salt
  • Black pepper

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a bowl, combine panko breadcrumbs, parmesan cheese, garlic powder, salt, and black pepper.
  3. Beat egg in another bowl. Dip chicken into egg, then coat with breadcrumb mixture.
  4. Place chicken on baking sheet, drizzle with olive oil, and bake for 20–25 minutes until golden and cooked through.
  5. Prepare dressing by blending mayonnaise, Greek yogurt, parsley, basil, chives, lemon juice, garlic, olive oil, salt, and pepper until smooth.
  6. In a large bowl, combine lettuce, cabbage, cucumber, green onions, and avocado if using.
  7. Slice cooked chicken into strips.
  8. Toss salad with dressing, top with chicken, and serve immediately.
