Ingredients

  • Rice noodles

  • Lime juice
  • Soy sauce

  • Olive oil
  • Honey or maple syrup
  • Salt

  • Red pepper flakes (optional)
  • Toasted sesame seeds, for garnish

Instructions

  1. Cook the rice noodles according to the package directions until tender, then drain and rinse under cold water.
  2. Place the cilantro, parsley, spinach, basil, ginger, garlic, green onions, lime juice, soy sauce, sesame oil, olive oil, and honey or maple syrup into a food processor or blender.
  3. Blend until the sauce is smooth and vibrant green.
  4. Taste the sauce and adjust with salt, black pepper, or additional lime juice if needed.
  5. Toss the cooked rice noodles with the green ginger sauce until evenly coated.
  6. Warm the noodles gently in a skillet over low heat for a few minutes if serving warm.
