Ingredients

  1. 1 lb fresh green beans, trimmed
  2. 8 oz mushrooms (button, cremini, or baby bella), sliced
  3. 2 tablespoons olive oil or butter
  4. 3 garlic cloves, minced
  5. Salt and black pepper, to taste
  6. 1 tablespoon lemon juice (optional)
  7. 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

Bring a pot of salted water to a boil. Blanch green beans for 3–4 minutes until bright green and crisp-tender. Drain and set aside.

  1. In a large skillet, heat olive oil or butter over medium heat. Add mushrooms and cook for 6–7 minutes until golden and their moisture evaporates.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in green beans, season with salt and pepper, and sauté for another 2–3 minutes until heated through.
  4. Finish with a squeeze of lemon juice and sprinkle with parsley, if desired.
  5. Serve warm as a side dish.
