Ingredients

  • pounds fresh green beans, trimmed and cut into bite-sized pieces (or canned or frozen green beans)
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon soy sauce
  • 1/4 teaspoon black pepper
  • 1 cup crispy fried onions, divided
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. If using fresh green beans, blanch them in boiling water for about 5 minutes, then transfer to ice water and drain well.
  3. In a large bowl, mix the condensed cream of mushroom soup, milk, soy sauce, and black pepper until smooth.
  4. Stir in the green beans and half of the crispy fried onions. Mix in the shredded cheddar cheese if using.
  5. Spread the mixture evenly into a greased 9×13-inch baking dish.
  6. Bake for 25 minutes until hot and bubbly.
  7. Sprinkle the remaining crispy fried onions evenly over the top.
  8. Return to the oven and bake for an additional 5 minutes until the onions are golden and crisp.
  9. Let the casserole rest for a few minutes before serving.

Notes

  • Add cooked bacon, sautéed mushrooms, or chopped almonds or pecans for extra flavor and texture.
  • Substitute cream of chicken or cream of celery soup for a different variation.
  • Prepare the casserole a day ahead and add the final onion topping just before finishing the bake.
  • Store leftovers in the refrigerator for up to 4 days in an airtight container.
  • Reheat in a 350°F oven for 15–20 minutes and add fresh fried onions if desired to maintain crispness.
