A thick and creamy Greek yogurt dip loaded with deeply caramelized onions, garlic, fresh thyme, and a touch of lemon. This savory make-ahead dip is delicious with chips, crackers, pita, or crunchy vegetables.

Ingredients
Plain Greek yogurt
Yellow onions, thinly sliced
Olive oil
Butter
Garlic, minced
Fresh thyme
Worcestershire sauce
Fresh lemon juice
Salt
Freshly ground black pepper
Fresh chives, chopped
Instructions
Heat the olive oil and butter in a large skillet over medium-low heat.
Add the thinly sliced onions and a small pinch of salt. Stir to coat the onions evenly in the butter and oil.
Cook for 30–40 minutes, stirring occasionally, until the onions are very soft and deeply golden brown.
Add the minced garlic and fresh thyme during the final 1–2 minutes of cooking. Cook just until the garlic is fragrant.
Remove the caramelized onion mixture from the heat and allow it to cool completely.
Place the Greek yogurt in a mixing bowl. Stir in the Worcestershire sauce, lemon juice, black pepper, and additional salt to taste.
Roughly chop the cooled caramelized onions if the pieces are long. Reserve a small portion of the onions for garnishing.
Fold the remaining caramelized onions into the seasoned Greek yogurt until evenly combined.
Cover and refrigerate the dip for at least 30 minutes, preferably 1–2 hours for a more developed flavor.
Stir and taste for seasoning before serving. Garnish with the reserved caramelized onions, chopped chives, and freshly ground black pepper.
Notes
Plain full-fat Greek yogurt provides the richest texture, but thick reduced-fat Greek yogurt can also be used.
For an extra-creamy dip, mix softened cream cheese or sour cream into the Greek yogurt.
Add onion powder for a stronger onion flavor or smoked paprika for a smoky variation.
Cayenne pepper or crushed red pepper flakes can be added for heat.
Rosemary can replace the thyme, or fresh parsley and dill can be added for a more herb-forward flavor.
A splash of balsamic vinegar can be added during the final few minutes of caramelizing the onions for extra sweetness and acidity.
Store the dip in an airtight container in the refrigerator for up to 3–4 days and stir before serving if liquid collects on the surface.
Freezing is not recommended because Greek yogurt can separate and become grainy after thawing.
