Ingredients

  • lamb chops
  • olive oil
  • lemon juice
  • garlic
  • dried oregano
  • fresh rosemary (optional)
  • salt
  • black pepper
  • lemon zest (optional)

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, pepper, and lemon zest if using.
  2. Coat lamb chops thoroughly in the marinade, cover, and refrigerate for at least 1 hour.
  3. Remove lamb chops from the refrigerator 20 minutes before cooking.
  4. Heat a grill pan or outdoor grill over medium-high heat.
  5. Cook lamb chops for 3–4 minutes per side for medium-rare, adjusting time as desired.
  6. Let the chops rest for 5 minutes after cooking.
  7. Serve with a squeeze of fresh lemon juice and optional herbs.
