Ingredients

  • 1 1/2 lbs chicken breasts or thighs

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked rice, quinoa, or couscous
  • 1 cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, sliced
  • 1/2 cup kalamata olives
  • 1/2 cup feta cheese
  • 1/2 cup hummus or tzatziki sauce
  • Optional additions: spinach, roasted chickpeas, fresh parsley, avocado, pita bread

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and black pepper.
  2. Add the chicken and marinate for at least 20 minutes or up to overnight in the refrigerator.
  3. Heat a skillet or grill pan over medium heat and cook the chicken until golden brown and fully cooked.
  4. Let the chicken rest for a few minutes before slicing.
  5. Prepare the rice, quinoa, or couscous according to package instructions.
  6. Chop the cucumber, tomatoes, and red onion.
