Greek Chicken Gyros are a flavorful Mediterranean-inspired meal featuring tender marinated chicken wrapped in warm pita bread with fresh vegetables and creamy tzatziki sauce. Packed with bright lemon, garlic, and herb flavors, these gyros are perfect for lunch, dinner, or meal prep.

Ingredients

  • 1 1/2 lb boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1/2 cup Greek yogurt
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 pita breads
  • 1 cup tzatziki sauce
  • 2 Roma tomatoes, diced
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1 cup lettuce, shredded
  • 2 tbsp fresh parsley, chopped (optional)
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. In a large bowl, combine the olive oil, lemon juice, garlic, Greek yogurt, oregano, paprika, cumin, salt, and black pepper.
  2. Add the chicken thighs and coat thoroughly in the marinade.
  3. Cover and refrigerate for at least 1 hour, preferably 4 to 8 hours.
  4. Preheat a grill, grill pan, or skillet over medium-high heat.
  5. Cook the chicken for 5 to 7 minutes per side, or until fully cooked and lightly charred.
  6. Transfer the chicken to a cutting board and let rest for 5 minutes.
  7. Slice the chicken into thin strips.
  8. Warm the pita bread briefly.
  9. Spread tzatziki sauce onto each pita.
  10. Top with sliced chicken, tomatoes, cucumber, red onion, lettuce, and optional parsley or feta cheese.
  11. Fold or wrap the pita and serve immediately.
