Greek Chicken Bowls are a fresh and wholesome meal featuring juicy herb-marinated chicken served over rice with crisp vegetables, tangy feta, and creamy homemade tzatziki. They’re perfect for meal prep, lunch, or a satisfying Mediterranean-inspired dinner.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups cooked rice, quinoa, or cauliflower rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup chopped romaine lettuce
  • 1/2 cup Kalamata olives
  • 1/2 cup crumbled feta cheese
  • Fresh parsley, chopped, for garnish
  • Lemon wedges, for serving
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1 clove garlic, minced
  • Salt and black pepper, to taste

Instructions

  1. Whisk together the olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and black pepper.
  2. Coat the chicken with the marinade and refrigerate for at least 30 minutes or up to 8 hours.
  3. Prepare the tzatziki by mixing the Greek yogurt, grated cucumber, lemon juice, dill, garlic, salt, and black pepper. Refrigerate until ready to serve.
  4. Grill or cook the chicken in a skillet over medium-high heat for 6–8 minutes per side, or until it reaches an internal temperature of 165°F (74°C).
  5. Let the chicken rest for 5 minutes, then slice into strips.
  6. Divide the cooked rice among serving bowls.
  7. Arrange the tomatoes, cucumber, red onion, romaine lettuce, olives, and feta around the rice.
  8. Top with the sliced chicken.
  9. Add a generous spoonful of tzatziki sauce.
  10. Garnish with fresh parsley and serve with lemon wedges.

Notes

  • Chicken thighs are an excellent substitute for extra juicy results.
  • Use quinoa or cauliflower rice for a different base.
  • Store the chicken, grains, vegetables, and tzatziki separately for meal prep.
  • Homemade or store-bought tzatziki both work well.
  • Serve with warm pita bread, hummus, roasted potatoes, or Greek salad.
