Instructions
Preheat the waffle iron until completely hot.
In a large bowl, whisk together the flour, cornstarch, baking powder, baking soda, granulated sugar, salt, and poppy seeds.
In a separate bowl, whisk together the eggs, milk or buttermilk, grapefruit juice, grapefruit zest, melted butter, and vanilla extract until evenly combined.
Pour the wet ingredients into the dry ingredients and gently stir just until combined. A few small lumps are fine; avoid overmixing.
Let the batter rest for about 5 minutes while the waffle iron finishes heating.
Lightly grease the waffle iron if necessary. Add enough batter to cover most of the cooking surface without overfilling.
Close the waffle iron and cook according to the manufacturer’s directions until the waffle is deeply golden and crisp.
Transfer each cooked waffle to a wire rack instead of stacking the waffles so steam can escape and the exterior remains crisp.
When making multiple batches, place the cooked waffles in a single layer on a wire rack set over a baking sheet and keep them warm in a 200°F (95°C) oven.
For the optional grapefruit glaze, whisk the powdered sugar with 2 tablespoons grapefruit juice until smooth. Add additional juice as needed to reach a drizzleable consistency, then stir in the grapefruit zest.
Serve the waffles warm with maple syrup, fresh grapefruit segments, berries, or the optional grapefruit glaze.
