Grape Tomato and Onion Salad with Feta is a fresh and colorful salad featuring sweet grape tomatoes, crisp red onion, creamy feta cheese, and a light Mediterranean-inspired vinaigrette. Perfect as a side dish for warm-weather meals, barbecues, and family gatherings.

Ingredients

  • 4 cups grape tomatoes, halved
  • 1/2 medium red onion, thinly sliced
  • 3/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and halve the grape tomatoes.
  2. Thinly slice the red onion and place it in a large salad bowl.
  3. Add the halved grape tomatoes to the bowl.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, salt, and black pepper.
  5. Pour the dressing over the tomatoes and onions.
  6. Toss gently until evenly coated.
  7. Add the crumbled feta cheese and chopped parsley.
  8. Toss lightly once more to combine.
  9. Let the salad sit for 10 minutes before serving.
  10. Serve chilled or at room temperature.

Notes

  • Add cucumbers, Kalamata olives, and basil for a Mediterranean variation.
  • Soak the sliced onions in cold water for 10 minutes to reduce sharpness.
  • Add avocado for extra creaminess.
  • Use balsamic vinegar instead of red wine vinegar for a different flavor profile.
  • Store in the refrigerator for up to 3 days.
  • Stir gently before serving if the dressing settles.
