This Grandma’s Macaroni Salad is a creamy, old-fashioned favorite made with tender elbow macaroni, crisp vegetables, hard-boiled eggs, and a tangy dressing. It’s a perfect make-ahead side dish for picnics, potlucks, barbecues, and family gatherings.

Ingredients

  • 24 ounces large elbow macaroni
  • 1/2 medium white onion, diced
  • 1 celery stalk, diced
  • 2/3 cup Miracle Whip
  • 1/3 cup mayonnaise
  • 1/4 cup sweet pickle relish
  • 1 teaspoon yellow mustard
  • Kosher salt, to taste
  • Black pepper, to taste
  • 6 hard-boiled eggs (4 diced, 2 sliced)
  • 2 tablespoons Salad Supreme seasoning, plus extra for garnish

Instructions

  1. Cook the elbow macaroni in salted boiling water until al dente. Drain and let it cool slightly.
  2. Transfer the cooked macaroni to a large mixing bowl and add the diced onion and celery.
  3. Whisk together the Miracle Whip, mayonnaise, sweet pickle relish, yellow mustard, kosher salt, and black pepper until smooth.
  4. Pour the dressing over the macaroni mixture and stir until evenly coated.
  5. Gently fold in the diced hard-boiled eggs and Salad Supreme seasoning.
  6. Arrange the sliced hard-boiled eggs over the top and sprinkle with additional Salad Supreme seasoning.
  7. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.

Notes

  • Add diced red or green bell peppers for extra crunch and color.
  • Mix in shredded cheddar cheese or cooked peas for a classic variation.
  • Use chopped dill pickles instead of sweet relish for a tangier flavor.
  • Store in an airtight container in the refrigerator for up to 3 days.
