A gourmet twist on classic grilled cheese featuring crisp sourdough, melted Gruyère and sharp cheddar, sweet caramelized onions, and tangy Dijon mustard. This rich and comforting sandwich makes an easy yet elevated lunch or dinner.

Ingredients

  • Sourdough bread, thickly sliced
  • Gruyère cheese
  • Sharp cheddar cheese
  • Yellow onion, thinly sliced
  • Butter, softened, plus more for caramelizing the onion
  • Olive oil
  • Dijon mustard
  • Fresh thyme
  • Salt
  • Freshly ground black pepper

Instructions

  1. Heat a little olive oil and butter in a skillet over medium-low heat. Add the thinly sliced onion and a small pinch of salt.
  2. Cook the onion for 25–35 minutes, stirring occasionally, until very soft and deeply golden. Reduce the heat if it begins to brown too quickly.
  3. Stir fresh thyme and black pepper into the caramelized onion, then transfer the mixture to a plate.
  4. Spread softened butter over one side of each slice of sourdough bread.
  5. Spread a thin layer of Dijon mustard over the unbuttered sides of the bread.
  6. Layer Gruyère and cheddar on the unbuttered side of one bread slice. Add caramelized onions and another small layer of cheese, then top with a second bread slice with the buttered side facing outward. Repeat to make 2 sandwiches.
  7. Heat a skillet over medium-low heat and place the assembled sandwiches in the pan, working in batches if necessary.
  8. Cook for 3–5 minutes on the first side, pressing gently with a spatula, until the bread is crisp and golden brown.
  9. Carefully flip each sandwich and cook for another 3–5 minutes.
  10. Keep the heat at medium-low so the cheese has time to melt completely without burning the bread. Cover the skillet briefly if necessary to help melt the cheese.
  11. When both sides are golden and the cheese is completely melted, transfer the sandwiches to a cutting board.
  12. Let the sandwiches rest for about 1 minute before slicing and serving immediately.

Notes

  • Add sautéed cremini mushrooms for an earthy mushroom grilled cheese variation.
  • Thinly sliced pear or apple pairs well with Gruyère, sharp cheddar, or Brie for a sweet and savory version.
  • Fontina, smoked Gouda, Brie, goat cheese, Swiss, mozzarella, or Monterey Jack can be substituted for some of the cheese.
  • Add jalapeños, crushed red pepper flakes, hot honey, or spicy mustard for extra heat.
  • Baby spinach, arugula, roasted tomatoes, or roasted red peppers can be added for extra vegetables.
  • Crispy bacon or finely chopped toasted walnuts can be added for extra texture.
  • Caramelized onions can be prepared up to 4 days ahead and refrigerated in an airtight container.
  • Store leftover sandwiches in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over medium-low heat, in a 350°F (175°C) oven for 8–10 minutes, or in an air fryer until crisp and hot.
