Ingredients

  • 12 ounces pasta of choice (spaghetti, penne, or fettuccine)
  • 4 ounces soft goat cheese
  • 1/2 cup basil pesto
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup reserved pasta water, as needed
  • 1 garlic clove, minced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil leaves, for garnish
  • Toasted pine nuts, for garnish (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to the package directions until al dente, reserving 1/4 cup of the pasta water before draining.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Sauté the minced garlic for about 30 seconds until fragrant.
  4. Stir in the basil pesto and goat cheese, allowing the cheese to soften and melt gently.
  5. Add a splash of the reserved pasta water and stir until the sauce is smooth and creamy.
  6. Toss the cooked pasta with the sauce until evenly coated.
  7. Stir in the Parmesan cheese and add more reserved pasta water if needed to reach the desired consistency.
  8. Season with salt and black pepper to taste.
  9. Garnish with fresh basil leaves and toasted pine nuts if desired before serving.
