Gluten-Free Strawberry Tart combines a crisp buttery gluten-free crust with fluffy vanilla cream and juicy fresh strawberries. This elegant make-ahead dessert is perfect for spring and summer gatherings, brunches, and special occasions.

Ingredients

  • 1 1/4 cups gluten-free all-purpose flour blend
  • 1/2 cup almond flour
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh lemon zest, optional
  • 1 lb fresh strawberries
  • 2 tablespoons apricot preserves or strawberry preserves, optional
  • 1 teaspoon water, optional

Instructions

  1. Combine the gluten-free all-purpose flour, almond flour, granulated sugar, and salt in a mixing bowl.
  2. Add the cold cubed butter and work it into the dry ingredients until the mixture resembles coarse crumbs.
  3. Add the egg and vanilla extract and mix until the dough begins to come together.
  4. Press the dough evenly over the bottom and sides of a tart pan. Refrigerate for 20–30 minutes while preheating the oven to 350°F (175°C).
  5. Lightly prick the bottom of the chilled crust with a fork. Line it with parchment paper and fill with pie weights or dried beans.
  6. Bake for 15 minutes. Carefully remove the parchment and weights and bake for another 8–12 minutes, or until lightly golden and completely baked. Let the crust cool completely.
  7. Beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  8. In a separate bowl, whip the heavy cream until firm peaks form.
  9. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy. Fold in the optional lemon zest.
  10. Spread the cream filling evenly inside the completely cooled tart shell.
  11. Wash and thoroughly dry the strawberries. Remove the stems, slice the berries, and arrange them over the filling.
  12. For an optional glaze, gently warm the preserves with the water until smooth, then brush a thin layer over the strawberries.
  13. Refrigerate the assembled tart until chilled and set, then slice and serve.
