Ingredients

  • Gluten-free all-purpose flour
  • Eggs
  • Milk of choice (dairy or plant-based)
  • Melted butter or olive oil
  • Salt
  • Garlic powder (optional)
  • Black pepper
  • Fresh herbs, finely chopped (optional)
  • Butter or oil, for cooking

Instructions

  1. In a large bowl, whisk together the gluten-free all-purpose flour and salt.
  2. Add the eggs, milk, and melted butter or olive oil, whisking until the batter is smooth.
  3. Stir in the garlic powder, black pepper, and fresh herbs if using.
  4. Let the batter rest for 15–20 minutes.
  5. Heat a lightly greased nonstick skillet or crepe pan over medium heat.
  6. Pour about 1/4 cup of batter into the pan, swirling immediately to form a thin, even layer.
  7. Cook for 1–2 minutes until the edges begin to lift and the underside is lightly golden.
  8. Flip the crepe carefully and cook for another 30–60 seconds.
  9. Transfer to a plate and repeat with the remaining batter.
  10. Fill the crepes with your favorite savory ingredients, fold or roll them, and serve warm.

  • A gluten-free all-purpose flour blend containing xanthan gum produces the best texture.
  • Letting the batter rest helps the flour fully hydrate for softer, more flexible crepes.
  • Use plant-based milk and olive oil or vegan butter for a dairy-free version.
