Ingredients

  • 3 large eggs
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon anise extract (optional)
  • 1 ¾ cups gluten-free all-purpose flour blend
  • 2 teaspoons baking powder
  • Pinch of salt

Instructions

  1. Preheat the pizzelle iron according to the manufacturer’s instructions.
  2. In a large mixing bowl, beat the eggs and sugar until light and slightly thickened.
  3. Add the melted butter, vanilla extract, and anise extract if using. Mix until combined.
  4. In a separate bowl, whisk together the gluten-free flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms.
  6. Lightly grease the pizzelle iron if needed.
  7. Drop a small spoonful of batter onto the center of each pizzelle pattern.
  8. Close the lid and cook for 30 to 60 seconds, or until lightly golden.
  9. Carefully remove the pizzelles and place them on a wire rack to cool completely.
  10. Repeat with the remaining batter.
  11. Allow the cookies to cool fully before storing.
