Ginger Scallion Noodles are a simple and flavorful dish featuring tender noodles tossed in a fragrant sauce made with fresh ginger, scallions, and savory seasonings. Quick to prepare and incredibly satisfying, these noodles are perfect for weeknight meals or easy lunches.

Ingredients

  • 12 ounces wheat noodles, lo mein noodles, ramen noodles, or spaghetti
  • Water for cooking
  • 1/4 cup vegetable oil
  • 1 cup scallions, finely sliced
  • 3 tablespoons fresh ginger, finely grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/4 teaspoon white pepper
  • Additional sliced scallions (optional)
  • Sesame seeds (optional)
  • Chili crisp (optional)
  • Fresh cilantro (optional)

Instructions

  1. Bring a large pot of water to a boil.
  2. Cook the noodles according to package directions until tender.
  3. Reserve 1/4 cup of the noodle cooking water, then drain the noodles.
  4. Heat the vegetable oil in a small saucepan over medium heat.
  5. Add the scallions and ginger.
  6. Cook for 1–2 minutes until fragrant but not browned.
  7. Remove the saucepan from the heat.
  8. Stir in the soy sauce, sesame oil, sugar, and white pepper.
  9. Place the cooked noodles in a large bowl.
  10. Pour the ginger scallion sauce over the noodles.
  11. Toss thoroughly until evenly coated.
  12. Add a splash of reserved noodle water if needed to loosen the sauce.
  13. Garnish with additional scallions, sesame seeds, chili crisp, or cilantro if desired.
  14. Serve immediately.

Notes

  • Do not brown the ginger and scallions to preserve their fresh flavor.
  • Add chicken, shrimp, tofu, beef, or edamame for extra protein.
  • Chili crisp adds a delicious spicy kick.
  • These noodles can be served warm, at room temperature, or chilled.
  • Store leftovers in the refrigerator for up to 4 days.
