Garlic Parmesan Smashed Potatoes are crispy roasted potatoes with fluffy centers, savory garlic flavor, and a golden Parmesan crust. Perfect as a side dish, appetizer, or snack, these potatoes are easy to make and irresistibly delicious.

Ingredients

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place the potatoes in a large pot of salted water and boil until fork-tender, about 15–20 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. Arrange the potatoes on the prepared baking sheet.
  5. Using the bottom of a glass or potato masher, gently smash each potato until flattened.
  6. In a small bowl, combine the olive oil, melted butter, minced garlic, Italian seasoning, salt, and black pepper.
  7. Brush or spoon the garlic mixture generously over the potatoes.
  8. Sprinkle the Parmesan cheese evenly on top.
  9. Bake for 25–30 minutes until the potatoes are golden brown and crispy around the edges.
  10. Garnish with fresh parsley and optional red pepper flakes before serving.
