Ingredients

  • 12 oz spaghetti, linguine, or fettuccine
  • 2 cups fresh sweet corn kernels
  • 1 ball (8 oz) burrata cheese
  • 2 large eggs
  • 2 egg yolks
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 cup reserved pasta cooking water

Instructions

  1. Bring a large pot of generously salted water to a boil and cook the pasta until al dente according to the package directions. Reserve about 1 cup of the pasta cooking water before draining.
  2. In a bowl, whisk together the eggs, egg yolks, and grated Parmesan cheese until smooth.
  3. Heat the butter and olive oil in a large skillet over medium heat.
  4. Add the minced garlic and cook for about 30 seconds until fragrant.
  5. Stir in the corn kernels and cook for 4-5 minutes until tender and lightly caramelized.
  6. Add the parsley, basil, and thyme, stirring to combine.
  7. Remove the skillet from the heat and add the drained pasta.
  8. Slowly pour the egg and Parmesan mixture over the hot pasta, tossing continuously to create a smooth, creamy sauce.
  9. Add small amounts of the reserved pasta water until the sauce reaches a silky consistency.
  10. Season with salt, black pepper, and crushed red pepper flakes if desired.
  11. Divide the pasta among serving bowls and place pieces of burrata on top.
  12. Allow the burrata to soften slightly, then gently mix it into the pasta before serving.
