Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes into evenly sized pieces.
- In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1–2 minutes until fragrant. Remove from heat.
- In a large mixing bowl, toss the cubed sweet potatoes with the garlic butter, olive oil, salt, and pepper. Add paprika or thyme if using.
- Spread the sweet potatoes in a single layer on a parchment-lined baking sheet.
- Roast for 30–35 minutes, flipping halfway through, until the potatoes are golden brown and tender.
- Garnish with chopped fresh parsley before serving.
