Ingredients

  1. 2 lbs sweet potatoes, peeled and cubed
  2. 3 tablespoons unsalted butter
  3. 3 cloves garlic, minced
  4. 1 tablespoon olive oil
  5. 1 teaspoon salt
  6. 1/2 teaspoon black pepper
  7. 1/2 teaspoon paprika or thyme (optional)
  8. 1 tablespoon chopped fresh parsley (for garnish)

Instructions

Preheat your oven to 400°F (200°C).

  1. Peel and cube the sweet potatoes into evenly sized pieces.
