Fudgy Flourless Chocolate Cake is a rich, intensely chocolatey dessert with a dense, moist, almost truffle-like center and a delicate crust. Serve it simply with powdered sugar or add fresh berries and whipped cream for an elegant finish.

Ingredients

  • High-quality dark or semisweet chocolate, chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch or 9-inch round cake pan and line the bottom with parchment paper.
  2. Place the chopped chocolate and butter in a heatproof bowl. Melt gently over a double boiler or in short microwave intervals, stirring frequently until completely smooth.
  3. Let the melted chocolate mixture cool for a few minutes.
  4. In a separate bowl, whisk the eggs and granulated sugar until well combined and slightly lighter in color.
  5. Gradually whisk the melted chocolate and butter into the egg mixture until smooth and glossy.
  6. Add the cocoa powder, vanilla extract, salt, and optional espresso powder. Gently mix until no dry pockets of cocoa remain.
  7. Pour the batter into the prepared cake pan and smooth the top into an even layer.
  8. Bake for 22 to 30 minutes, until the edges are set and the center is just set but still slightly soft. Avoid overbaking to preserve the fudgy texture.
  9. Remove the cake from the oven and let it cool completely in the pan for about 1 hour. The center may settle slightly as it cools.
  10. Carefully remove the cooled cake from the pan. Dust with powdered sugar or cocoa powder and serve with fresh berries or whipped cream if desired.
