Fruit pizza is a colorful dessert made with a soft sugar cookie crust, creamy cream cheese frosting, and a vibrant assortment of fresh fruit. It’s perfect for parties, summer gatherings, and special occasions.

Ingredients

  • Sugar cookie dough
  • Cream cheese
  • Powdered sugar
  • Vanilla extract
  • Strawberries
  • Blueberries
  • Kiwi
  • Mandarin oranges
  • Grapes
  • Raspberries
  • Blackberries
  • Apricot preserves (optional)
  • Water (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Press the sugar cookie dough evenly onto a greased pizza pan or large baking sheet, forming a large circle.
  3. Bake for 12 to 15 minutes or until lightly golden around the edges. Allow the crust to cool completely.
  4. In a mixing bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract and continue beating until creamy and well combined.
  5. Spread the cream cheese mixture evenly over the cooled cookie crust.
  6. Wash, dry, and prepare all fruit by slicing larger fruits into bite-sized pieces.
  7. Arrange the fruit decoratively over the cream cheese layer.
  8. If using a glaze, heat the apricot preserves with a small amount of water until smooth and brush lightly over the fruit.
  9. Refrigerate for at least 1 hour before slicing and serving.

Notes

  • Use seasonal fruits such as peaches, cherries, or pomegranate seeds for variety.
  • Pat fruit dry thoroughly before arranging to prevent excess moisture.
  • For best results, assemble shortly before serving.
  • Store covered in the refrigerator for up to 3 days.
  • A brownie or shortbread crust can be substituted for the sugar cookie base.
  • Drizzle with melted white chocolate for an extra decorative touch.
