This Frosted Watermelon Rosemary Frosé is a refreshing frozen cocktail made with sweet frozen watermelon, crisp dry rosé, and fragrant rosemary blended into a smooth, icy drink. It’s an elegant and easy summer beverage that’s perfect for brunches, patio gatherings, and warm-weather entertaining.

Ingredients

  • 3 cups seedless watermelon, cubed and frozen
  • 2 cups chilled dry rosé wine
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons simple syrup or honey (optional)
  • 1 teaspoon finely chopped fresh rosemary, plus extra sprigs for garnish
  • 1 cup ice
  • Watermelon wedges, for garnish
  • Lemon slices, for garnish (optional)

Instructions

  1. Spread the watermelon cubes on a baking sheet and freeze until completely firm if not already frozen.
  2. Add the frozen watermelon, chilled rosé, lemon juice, simple syrup or honey if using, chopped rosemary, and ice to a high-powered blender.
  3. Blend until smooth and slushy.
  4. If the mixture is too thick, add a splash of rosé. If too thin, blend in additional frozen watermelon or more ice.
  5. Taste and adjust the sweetness if desired.
  6. Pour the frosé into chilled glasses.
  7. Garnish with rosemary sprigs, watermelon wedges, and lemon slices if desired.
  8. Serve immediately while icy and refreshing.
