  • 1 1/2 pounds perch fillets
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 2 large eggs
  • 2 tablespoons milk
  • Vegetable oil for frying
  • Lemon wedges for serving

Instructions

  1. Pat the perch fillets dry with paper towels.
  2. In a shallow bowl, combine flour, cornmeal, paprika, garlic powder, salt, and black pepper.
  3. In another bowl, whisk together the eggs and milk.
  4. Dip each perch fillet into the egg mixture, then coat thoroughly in the seasoned flour mixture.
  5. Heat vegetable oil in a large skillet over medium-high heat.
  6. Fry the perch fillets in batches for about 3–4 minutes per side until golden brown and crispy.
  7. Transfer the cooked fish to a paper towel-lined plate to drain excess oil.

Notes

  • Add cayenne pepper for a spicy variation.
  • Use extra cornmeal for a crunchier Southern-style coating.
  • Air fry at 375°F for a lighter option.
  • Pat the fish dry before breading to help the coating stick.
  • Store leftovers in the refrigerator for up to 2 days.
  • Reheat in the oven or air fryer to maintain crispiness.
