Ingredients

  • 3 pounds chicken pieces (drumsticks, thighs, wings, or breasts)
  • 2 cups buttermilk
  • 1 tablespoon hot sauce (optional)
  • 2½ cups all-purpose flour
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional)
  • Vegetable oil, canola oil, or peanut oil for frying

Instructions

  1. Place the chicken pieces in a large bowl.
  2. Pour the buttermilk and hot sauce over the chicken.
  3. Cover and refrigerate for at least 4 hours or overnight.
  4. In a large shallow dish, combine the flour, paprika, garlic powder, onion powder, thyme, salt, black pepper, and cayenne pepper.
  5. Remove the chicken from the marinade and allow excess buttermilk to drip off.
  6. Dredge each piece thoroughly in the seasoned flour mixture.
  7. Press the coating onto the chicken to create a thick crust.
  8. Place the coated chicken on a wire rack and let it rest for 15 minutes.
  9. Heat oil in a large Dutch oven or deep fryer to 350°F (175°C).
  10. Fry the chicken in batches, avoiding overcrowding.
  11. Cook for 12–18 minutes depending on the size of the pieces, turning occasionally.
  12. Ensure the internal temperature reaches 165°F (74°C).
  13. Transfer the chicken to a wire rack to drain.
  14. Allow it to rest for a few minutes before serving.
