1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/4 tsp cayenne pepper (optional)
1 tsp salt
1/2 tsp black pepper
Vegetable oil, for frying
8 corn or flour tortillas
2 cups shredded cabbage or lettuce
1 cup diced tomatoes
1 sliced avocado
1 cup shredded cheddar or Mexican cheese blend
1/4 cup fresh cilantro
Lime wedges, for serving
Sour cream, ranch, or chipotle sauce, for serving
Instructions
Marinate the chicken in buttermilk to keep it juicy and tender.
In a shallow bowl, combine the flour, cornstarch, paprika, garlic powder, onion powder, salt, black pepper, and optional cayenne.
Coat the chicken thoroughly in the seasoned flour mixture.
Heat vegetable oil and fry the chicken until golden brown and fully cooked.
Transfer the fried chicken to a wire rack or paper towels to drain excess oil.
Warm the tortillas in a skillet or microwave until soft and flexible.
Slice or chop the fried chicken into bite-sized pieces.
Fill each tortilla with fried chicken, cabbage, tomatoes, avocado, cheese, cilantro, and your preferred sauce.
Finish with a squeeze of fresh lime and serve immediately.
Notes
Use spicy seasoning in the flour for extra heat.
Air fry or bake the chicken for a lighter version.
Add pickled onions, jalapeños, corn salsa, or black beans for extra flavor.
Try avocado crema, honey mustard, buffalo sauce, ranch, or chipotle sauce as toppings.
Store leftover chicken separately in an airtight container in the refrigerator for up to 3 days.
Reheat the chicken in an oven or air fryer to restore crispiness.
Keep tortillas and toppings separate until ready to serve.
